Program of the Gnocchi and Italian Ice Cream course:
- Welcome with a welcome drink with breathtaking views of the Chianti hills and an enchanting view of Barberino Val D'Elsa;
- Meeting with our chef who will guide you, step by step, in the preparation of traditional Italian potato gnocchi . After learning the history of this unique dish you will recreate the iconic gnocchi yourself. You will always work only with fresh and seasonal products selected by us. Then we will move on, during the cooking of our gnocchi, to the preparation of the ice cream.
- And now everyone at the table! Of course, after you are done cooking, you can sit back and relax as we serve your culinary creations with wine pairings from the local vineyards.

The vegetarian course is aimed at all cooking enthusiasts who are vegetarians. We will therefore make use of products entirely of plant origin.
The SiChef school, known for its welcoming and professional environment, is located in an area renowned for its vineyards and culinary history. The school building, a restored old farmhouse, overlooks hills covered with vineyards and olive groves, offering a serene and inspiring environment. The classrooms are equipped with modern equipment, but maintain a rustic charm that reflects the essence of the Italian culinary tradition.
The course begins with a theoretical session, during which students are introduced to the history and importance of gnocchi and ice cream in Italian culture. We discuss the evolution of these dishes over time and the influence of different Italian regions on their variations. The instructors, professional chefs with years of experience, share anecdotes and practical advice, creating a link between theory and culinary practice.
Subsequently, we move on to practice, with particular attention to potato gnocchi. Students learn to select the right potatoes for making gnocchi, which is crucial to ensuring the ideal texture. The lesson covers every stage of the process: from cooking the potatoes, to their transformation into a soft and workable dough, up to the formation of the gnocchi themselves. The emphasis is on manual skills and the ability to "feel" the dough, skills that only direct experience can teach.
At the same time, the course is dedicated to the preparation of Italian ice cream, a classic loved all over the world. Here, students discover the science behind creating creamy, flavorful ice cream, learning to balance ingredients like milk, cream, sugars and natural flavors. Importance is given to the creaming technique, essential for obtaining the perfect consistency of the ice cream. The course offers the opportunity to experiment with different flavors and ingredients, encouraging creativity and innovation.
Recipes will be provided to you after class, making sure you can recreate these two simple delights in your home as well.
